I love udon/soba etc soups, but most dashi is made from fish. I have made a decent replacement (http://www.flickr.com/photos/toxickaty/2601834655/) using Trader Joe's soy ginger broth, but it makes a pot and sometimes, you just want a bowl. <BR/>The tempura sounds terrible though and I worship tempura vegetables. :(<BR/>I will have to call a few of my favorite Japanese restaurants to find out if they can do a vegetarian version of their soup, because that sounds so good right now. <BR/>PS Shawn and I made it to West Side Chili last night for a veggie 3-way.
